Right about now is my favorite time of the year. My favorite season is upon us. The air turns crisp, the leaves start to change color, and it's time to clean out the garden. I love the fall. I love everything about it. I love how it feels, I love how it smells, and I definitely love how it looks. Fall means so many things. It means kids are back in school, and soccer is starting. It means a final camping trip for the year. It means sweatshirts, it means football and popcorn, and it means beautiful crunchy leaves on the ground. It means helping Grandma gather them up, and it means running and screaming and jumping inside. It means feeding the horses the cornstalks, and picking all of the zucchini, and last but not least it means salsa. It means one large chunk of an entire day brewing the vegetables that have grown in the garden and smelling the sweet, enticing smells of the harvest. It means grinding it all up, and crying while the onions are peeled, and stinging eyes as the peppers are added. It means lots of garlic smelling up the house and seeping into your clothes. It means waiting and waiting throughout the day to taste the final outcome. It's the waiting all day that makes the dipping of the chip worth it as it crunches in my mouth and I finally savor the first taste of fall. It's the salsa that really tells the tale for me. It's how I know that summer has ended and that fall has officially arrived. It's the beautiful salsa all bottled up that tells me for sure that my favorite season has arrived. Just looking at it makes my mouth water. I am certain that fall tastes good!

DeeAnn's Salsa
6 quarts ground up tomatoes 6 bell peppers
6 large onions 6 jalapenos (4 with seeds added)
6 anaheims (3 with seeds added) 1 cluster garlic
Simmer for 45 minutes. Add 1/4 c. salt and 1/4 c. vinegar. Cook down as long as you want for thickening. Process quarts 45 minutes. Process pints 30 minutes. (I also add 2 yellow bell peppers, 2 orange bell peppers, and 2 red bell peppers because it looks beautiful in the bottle! Also change the amounts of jalapenos and anaheims with seeds to your own taste.)

It looks yummy! I love the Fall too, it doesn't happen around here for a while and it isn't the same kind of Fall but it does cool off and that is the best!
Oh I'll bring the chips!! Looks delish!! Don't you love canning season. It's a labor of love for sure, but sooo worth it. Way to go!

What a beautiful post! I really want to can salsa too, but I heard you have to put a lot of vinegar in it - and my go to recipe doesn't have vinegar. Can you share your recipe! It looks amazing - you are a very talented photographer!
